Dinner: Vegetarian Chili

My kids'
favorite is vegetarian chili, which of course could also have chicken or
ground beef added. It’s super easy and mom friendly.
Minced garlic
1 white onion, chopped
1 red pepper, diced
28 oz ground tomatoes
16 oz kidney beans
16 oz black beans
16 oz frozen corn
1 T chili powder
Cumin to taste
1. Cook onion, garlic, peppers in olive oil until softened
2. Add remainder of ingredients
3. Let simmer for 45 minutes
4. Serve with grated cheese and corn bread or tortillas
*Doubles and freezes well. Serves 6-8
Snack: Kix Covered Tofu

I myself, am not one for tofu, but my son loved it!
Extra firm tofu cut into bite size pieces
Kix or Gorilla Munch cereal
In a zip lock baggie, smash up Kix or (gorilla munch). My son liked it a
little crunchier so I left some bigger pieces of Kix. You can smash it to
pretty fine if your little one doesn't like the extra crunch.
Once smashed up, throw tofu into bag and toss until coated! I would pack
both things separately (for play dates, park outings, etc) and throw them
together when he was ready to eat since it doesn't travel great all mixed
up!
He loved it and would eat tons of it. A GOOD, HEALTHY snack!
Dinner: Tuna Noodle

*I make this recipe low fat (light mayo, skim milk,
Fat Free or Reduced Fat Cream of Celery Coup, low fat American cheese) but
you can make it with full fat items as well. The only thing that DEFINITELY
should be FULL FAT is the Potato Chips. I’ve found that low fat or baked
chips don’t work well.
8 oz of Egg Noodles
2 cans Tuna
½ cup Light Mayo
½ cup Milk (skim, whole, 2%- any are fine)
1 can Cream of Celery Soup
2/3 of a white onion
1 Tsp Salt
8-9 ounces of Low Fat American Cheese (FYI- 3 slices=2 oz)
Regular Potato Chips (Ruffles work well)
Preheat oven to 425 degrees.
Take noodles (cooked), tuna (drain tuna); put noodles in bowl, then break up
tuna into small pieces and throw in bowl.
In blender, put mayo, milk, cream of celery soup, onion (cut up), salt;
grind all in the blender together.
To this, throw in American Cheese cut into cubes (pile up sheets, cut them
while blender is on, drop cubes in)
When it’s all ground up, dump the whole thing over the noodles and tuna; mix
very well.
Dump into a greased oven-proof casserole dish
Crush handfuls of potato chips on top.
Bake 20-30 minutes. Potato Chips will start to brown when it’s done.

Cottage Cheese
Cinnamon

Vanilla Extract
Slice of Bread
Blueberries (optional)
Mix cottage cheese with cinnamon, sugar, and a dash of vanilla extract.
Melt the cottage cheese mixture on top of a piece of toast in the toaster
oven
For added yummyness, mix in some blueberries with the cheese. They get hot
and plumpy and taste delicious!
This makes for a perfect yummy breakfast or dessert!
